A look at some of my favorite blogs and their recipes that I made in 2017. What did I even cook before I had food blogs to search!? Â
Before I ever posted on a food blog, I was an obsessed food blog follower. Â I love the stories, the creativity, the pictures, and the excitement you feel whenever a blogger posts a recipe. Â How many times have you looked at a recipe and thought, “I would never make that. Â But so and so blogger did and she said it's awesome, so I guess I will!” (Like the Cauliflower Burger below for instance). Â Certain bloggers names have become common place in my home (is that weird?) and it's not a rare instance for my mom to respond to my dinner invite with, “Is it a Mel recipe?”
To honor these amazing blogs that came before me and inspired so many amazing meals in my home, I'm revealing my favorite recipes I made from the Blogosphere in 2017!
Starting with the first blog I ever followed . . .
Mel's Kitchen Cafe: Â Whole Wheat Quinoa Bread
You would think Mel is one of the sisters the way her name gets mentioned around here. I learned a lot of my cooking skills following Mel. In fact she is the very reason I'm rockin' yeast dough nowadays. Her posts will make you laugh every time and her enthusiasm for good food is contagious. She has answered so many of my questions and continues to be a major support in my new venture. This Whole Wheat Quinoa Bread is the softest 100% whole grain bread I've ever eaten and is 1 of the 2 wheat breads I plan on making for ever and ever. This bread is so light that my kids shriek with excitement thinking that I'm serving them “real life white bread”. Poor, poor deprived children 🙂
Pressure Cooking Today: Â Pressure Cooker Potato Cheese Soup
Barbara is the Pressure Cooking Queen!  I learned everything I know about the pressure cooker (Instant Pot) from her and there is no one that knows how to use this appliance better than her.  She has been so quick to help me every time I needed guidance and she makes AMAZING food!  She is a good, honest, fair business woman and inspires me with her example.  If you have a pressure cooker/Instant Pot, you need to follow her blog and buy her cookbook The Electric Pressure Cooker Cookbook.  My sis Maegan made me this Potato Cheese Soup and it is THE BEST potato soup I've ever had. Perfect for winter!
The rest of these blogs I discovered when I took the online course Go Sugar Free and 3 years later I still check out every new post they do. Â They all shine in making healthy food taste amazing and I've learned so many tricks from them over the years.
Pinch of Yum: Spicy Cauliflower Burger
Lindsay is the most entertaining, creative writer I know.  Her passionate writing will make you laugh out loud, burst into tears, call your mama, text your sister, etc, etc.  She's definitely one that inspires me to try new things like a Cauliflower Burger. This burger is on my top 10 list of all time. I love it so much and I love that this recipe is what introduced me to Sir Kensington's Chipotle Mayo and all their high quality condiments.  Don't even think about it too hard, just trust me and make this burger!
Well Plated: Â Breakfast Quesadilla with Cheese, Spinach and White Beans
Erin is the absolute master of making healthy, low sugar food taste as good or better than the original. Â I love her cooking style so much and she is an incredibly talented story teller. Â Her vibe is so happy and pleasant, it's a joy to read through her posts. Â These Breakfast Quesadilla's are so simple and are a 5 out of 5 winner in my home. Â I have yet to make anything by Erin that I didn't like, and that is impressive!
Gimme Some Oven: Â Crunchy Asian Ramen Noodle SaladÂ
Ali makes vegetables and salads taste better than anyone I know. Â If you're looking for a good salad or dressing recipe, her blog needs to be your go to! Â She proves how good these foods can be. Â This Asian Ramen Noodle Salad is one of my top 2 salads to make for a party (the other being Mel's Cashew Chicken Salad), and people swoon over it every time. Â Every single ingredient plays a very tasty, essential part. Â I love it more than I can say!
Iowa Girl Eats: Â Balsamic Steak and Peach Salad
Last but not least, Kristin. She makes rockin', amazing homestyle type food that is food for my soul. Her love for her family is very apparent and following her makes you feel like her best friend/neighbor. She makes gluten-free food easy, satisfying, and delicious and I have referred many patients to her blog for that exact reason. The second peach season starts, I'm all over this amazing Steak and Peach Salad. It is the perfect combination of flavors and even my husband happily has salad for dinner when this is on the menu.
