PEACHES ARE THE NUMBER ONE MOST AMAZING FRUIT OF ALL TIME!!!

Even if you don't agree, I'm gonna bet that 99% of you think they are at least in the top 5.
Juicy, sweet, glorious peaches, I could eat them every day. And I do in the summer because in the winter, yuck, they are terrible where I live.
To make sure we all live our best peach life, I've rounded up the Best Peach Recipes from my blog that are either cooked in the electric pressure cooker or are used as a to die for side dish. I've also included a few extras from other blogs that I have in my handy Paprika App that I plan to try soon.

HOW TO TELL IF PEACHES ARE RIPE
Give them a gentle squeeze. If they are perfectly ripe, they will be quite soft. If they are rock hard, let them sit at room temperature until soft. Also, look for some wrinkling of the skin around the stem. This a good sign that the peach is ready to eat.
HOW TO PEEL A PEACH
My favorite way is to use this Fruit Peeler because it is meant for softer fruit. If I'm peeling a lot of peaches, I will use the blanching method: Bring a pot of water to a rolling boil. Drop several peaches in the water, wait 45 seconds, then use a slotted spoon to place them in a bowl of ice water. The peel should slip right off.
CAN YOU EAT PEACH SKIN?
I personally do not like peach skin at all and feel that it totally ruins my peach eating experience. However, yes, you can eat it and it is also rich in vitamins, fiber, and antioxidants. Read more about the Healthy Benefits of Eating Peach Skin.

Hearty Steel Cut Oats, Sweet Peach Compote, Maple Cinnamon drizzle, and a splash of cream. This will be my favorite oat recipe for the rest of my life.
Sweet summer peaches mean this compote needs absolutely no added sweetener. Put it in yogurt, on oats (like the one above), or make a pie out of it!

This BBQ Sauce is a breeze to whip up and I've been known to eat more sauce than meat on several occasions. Can you relate?
I never even liked ribs until I ate them from a pressure cooker! These ribs get glazed on the grill with the Peach BBQ Sauce from above and they get two thumbs up from my father in law (and that's saying something special!)
If I will eat fish, you know the recipe deserves a grammy. Tender halibut, soothing basil crema, and a peach salsa good enough to be the main course – that's how fish tacos are done!

One of my favorite discoveries of the year is fruit soup. It can be whipped up in no time in the Instant Pot and makes an amazing healthy breakfast or dessert.
I wait all year for prime peaches to make my favorite peach, raspberry, lemon flavored water. It's so refreshing on a hot summer day when plain ol' water just doesn't cut it.
Technically this salsa calls for mangos, but I have no doubt that it will be amazing with peaches and it will be one of the first things I make when my counter is overflowing with peaches.
