A month ago I was asked by Stephanie of Eat Happy Nutrition to be a guest speaker for her upcoming conference, “The Happy Healthy Mom Summit” to talk about cooking healthy meals for my family in my Electric Pressure Cookers.
To say I eagerly accepted is a BIG, FAT lie! If I recall correctly (I was hyperventilating at the moment, the memory is a bit vague), I mentally listed all the reasons I couldn’t do it, checked to see if I had any leftover Xanax from the twin newborn phase of my life (nada), and then checked my Headspace app for a meditation on “how to avoid things that make you uncomfortable” (again, nada).
But here I am! One online, LIVE interview with Stephanie later and I am still alive, unmedicated, and feeling just a tiny bit more confident that I can do things that scare me.
In my interview you’ll get my personal insights on feeding families, how to keep it realistic, and how my dear electric pressure cookers have made it all possible for me. You’ll laugh, you’ll cry, but then mostly laugh at my extremely awkward sign off comment that I’m still agonizing over. What can I say, once an awkward public speaker, always an awkward public speaker 😊

The conference is a group of 27 women that have come together to talk about all things exercise, nutrition, emotional well-being, mindfulness, etc, etc. Basically everything you want and need to know to get you on the path to being the mother you want to be.
