- 12 ounces penne pasta – I like Jovial Gluten Free Brown Rice Penne
- 1 pound boneless skinless chicken breast, cut into bite size pieces
- 2 tablespoons butter
- 2 tablespoons cornstarch
- ½ cup drained sun-dried tomatoes, (from a bottle of julienned sun-dried tomatoes in oil)
- 2 garlic cloves, minced
- 2 teaspoons kosher salt
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
- ¼ – ½ teaspoon crushed red pepper flakes
- ½ teaspoon black pepper
- 3 cups chicken broth
- 2 cups milk (skim, 1%, or 2% all work)
- 1 cup freshly grated parmesan cheese
For serving: Kale Walnut Pesto or store-bought pesto
